Take a little more transit and eat a little less meat — two things you can do to reduce your impact on the environment. In this installment of Meatless Mondays (yes, it’s Tuesday) with Metro, let’s take a trip to Blue Bird Sushi in Long Beach.

Blue Bird is a very small restaurant that specializes in both sushi and ramen. Although their menu contains the typical non-vegan items, they have an entirely different menu that highlights vegan only based meals.
There were a lot of interesting items on the menu that made it difficult to choose exactly what I was craving. The fresh roll uses an assortment of vegetables wrapped in white rice, and includes a topping of sliced jalapenos, lemon and a spicy cilantro sauce.
My favorite item on the menu is the ‘tofu lover’ – I’m one of those stereotypical vegans that love tofu. The roll contains a variety of vegetables, wrapped in avocado and topped with fried tofu. It’s very similar to a California roll topped with fried scallops.

To get to Blue Bird Sushi, take the Blue Line to 1st Street Station then cross the street to the corner of Broadway/Long Beach to catch the Long Beach Transit Line 111 to Broadway/Falcon. Once you exit the bus, walk approximately 200 feet east on Broadway.
